Guest guest Posted September 6, 2001 Report Share Posted September 6, 2001 * Exported from MasterCook * Coconut Curry Rice Recipe By : Flying Biscuit Cafe' Serving Size : 1 Preparation Time :0:00 Categories : Grains Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoons margarine 1 small onion -- minced 1 1/4 teaspoons curry powder 2 1/2 cups jasmine rice, raw 1 stick cinnamon 2 teaspoons kosher salt 2 teaspoons sugar 3 1/2 cups water 1 14-oz can unsweetened coconut milk Melt margarine over medium heat in heavy saucepan. Add onion and curry and cook until onion is translucent. Add rice and stir to coat all the grains with butter and curry. Add the cinnamon stick, salt, sugar, water, and coconut milk to the rice. Bring to a boil, then reduce heat to a simmer. Cover and cook for 25 minutes. Rice grains will be tender, plumped, and sticky when done.
