Guest guest Posted September 6, 2001 Report Share Posted September 6, 2001 * Exported from MasterCook * Virtuous Vegan Pie Recipe By : Flying Biscuit Cafe' Serving Size : 5 Preparation Time :0:00 Categories : Main Dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1/2 teaspoon chili powder 1/2 teaspoon ground cumin 1/4 teaspoon cayenne pepper 1/2 teaspoon kosher salt 1/4 teaspoon black pepper -- freshly ground 2 small zucchini -- diced 2 small yellow squash -- diced 1 green bell pepper -- seeded and diced 1 red bell pepper -- seeded and diced 1/2 small onion -- diced 15 6-inch corn tortillas 1 cup canola oil for blanching the toritillas Spiced Pumpkin Seeds (recipe follows) Green Salsa (recipe follows) Preheat oven to 350 degrees. Heat 1 tablespoon of oil in a large skitllet over medium-high heat. Saute' chili powder, cumin, cayenne, salt, and pepper with diced vegetables until just tender. Remove from pan and place in a strainer to drain excess moisture. Prepare Spiced Pumpkin Seeds (recipe follows) and set aside. Heat 1 cup of the oil in a medium skillet over medium-high heat. To test whether the oil is hot enough, dip the edge of a tortilla in it. It should sizzle. When the oil is hot, dip tortillas in the oil for 3 to 5 seconds. (You want to soften the tortillas. If they become crisp, you have cooked them too long.) Drain on paper towels to remove excess oil. Assemble the pies. Place 5 of the tortillas on a cookie sheet, top each with drained veggies, and sprinkle with Spiced Pumpkin Seeds. Cover with 5 more tortillas, the rest of the veggies, and the remaining 5 tortillas. Cover the pies with foil and bake for 20 minutes. Mix all ingredients in medium bowl until seeds are well-coated with spices.
