Guest guest Posted September 14, 2001 Report Share Posted September 14, 2001 Hot Mexican Potato SaladSource: Cookin' with Mission Friends '991 lb. tiny new potatoes1/4 cup water1/4 cup picante sauce1 Tbsp. lime juice1 Tbsp. olive oil or salad oil1/4 tsp. salt1 large tomato, seeded and chopped1/2 cup sliced pitted ripe olives1/4 cup sliced green onions1 Tbsp. snippe cilantro or parsleyIn a 2-quart microwave-safe casserole, micro-cook the potatoes and water,covered, on HIGH for 7 - 11 minutes or until potatoes are tender, stirringonce. Drain.Meanwhile for the dressing, in a small microwave-safe bowl, combine thepicante sauce, lime juice, oil, salt and pepper. Cook, uncovered, on HIGHfor 30 - 60 seconds, or until heated through. Add dressing to cookedpotatoes.
