Guest guest Posted September 14, 2001 Report Share Posted September 14, 2001 FRESH NOODLES LO MEIN1 Tbsp. dark sesame oil1 Tbsp. soy sauce1/2 lb. firm or extra-firm tofu, cut into 1" cubes6 cups vegetable broth1 tbsp. grated fresh ginger root1/8 tsp. crushed red pepper (opt)3 Tbsp. bottled teriyaki sauce or soy sauce1 large clove garlic, minced9 or 10 ounce package fresh linguine or fettuccine pasta1 lb. bag frozen Oriental-style vegetables, unthawed1 small onion, sliced lengthwise2 scallions, finely choppedHeat sesame oil and soy sauce in a skillet over medium-high heat and saute'tofu until golden on all sides and moisture is cooked out.In a large stock pot, bring bouillon or broth powder and water to a boil.Add ginger, red pepper, teriyaki sauce, garlic and linguine. Simmer 2minutes.Stir in browned tofu, frozen vegetables and onion; return to a boil andsimmer 2 minutes more. Stir in sliced scallions and serve.
