ORANGE-SCENTED SWEET POTATOES6 sweet potatoes, baked5 T. orange juice1/2 t. grated orange rind1/2 t. grated lemon rind1 t. grated fresh ginger rootpinch ground nutmeg2 1/2 T. maple syrup1/8 t. salt or to tastepecans, chopped and lightly toastedPreheat oven to 350 degrees. Peel sweet potatoes and place flesh in a foodprocessor along with remaining ingredients. Process until smooth. Bakepuree in a casserole dish until heated through, about 15 minutes.
