Macaroni with Cashew Pimento Cheese

Source: Vegetarian Cooking School Cookbook

1 cup macaroni noodles (whole-wheat, sesame or any other)1 cup water1 cup cashews, rinsed3 tsp lemon juice1 tsp onion powder½ tsp garlic powder1 4 oz jar pimentos½ - ¾ sea salt1 ½ cups bread crumbs, soft1 Blend until smooth 1 cup water and the remaining ingredients (except bread crumbs).2 Place drained and rinsed macaroni in flat casserole dish.3 Pour sauce over macaroni.4 Bake @ 350 for 20 minutes covered.5 Uncover and top with soft bread crumbs or cubes.6 Bake another 15 minutes.Serves 6 - 8
