CooCoo for Coconut

Source: Vegetarian Cooking School Cookbook

2 20 oz cans crushed pineapple1 12 oz can pineapple juice concentrate or pineapple, orange and banana juice½ cup coconut6 - 8 bananas3 packages Nature's Warehouse Coconut Cookies5 - 6 Tbl cornstarch1 Mix cornstarch with ½ of the pineapple juice.2 Set aside.3 Heat the rest of the juice, crushed pineapple and coconut until bubbly.4 Add cornstarch/juice mixture, and heat until thick, stirring constantly.5 Crumble 1 ½ packages of cookies on bottom of 9"x13" baking dish.6 Next put a layer of banana slices.7 Pour pineapple mixture next then another layer of bananas.8 Crumble the rest of the cookies on top.9 Press lightly, then chill in refrigerator.
