Guest guest Posted September 16, 2001 Report Share Posted September 16, 2001 Corn ChowderSource: The Best of Silver Hills Cookbook6 cups water1/2 cup diced onion1 Tbsp. olive oil1/2 cup chicken style seasoning1 tsp. salt1 Tbsp. diced parsley (fresh or dried)1/2 tsp. onion powder1/2 tsp. celery powderdash of cayenne (optional)1 1/2 cups diced potatoes1/3 cup grated carrots1/3 cup diced celery1 1/2 cups corn (frozen or canned)1 cup raw cashews1 cup waterSaute onion in olive oil in bottom of a large saucepan until clear. Add water and bring to a boil. Add seasoning and vegetable except corn. Simmer until soft. Add corn. Blend cashews in 1 cup of water until creamy and smooth.
