Blueberry MuffinsSource: The Best of Silver Hills Cookbook1 cup raw cashews1 cup water1/2 cup maple syrup1/2 tsp. salt1 tsp. vanilla1 Tbsp. Egg Replacer or other commercial egg replacement1 tsp. lemon juice1 1/3 cups unbleached white flour2 1/2 tsp. baking powder2 cups fresh or frozen, unsweetened blueberriesPreheat oven to 350 degrees. Place cashews and water into blender and blend until very smooth. Add remaining ingredients except flour, baking powder and blueberries to blender and continue blending until well combined. Pour blended mixture into a large bowl. Add flour and baking powder and mix. Stir in blueberries. Spoon mixture into muffin tins that have been well sprayed with vegetable oil. Bake for 20 - 25 minutes.
