Tummy Warming Fruit Soup

Source: 100% Vegetarian

 

Combine the following in a saucepan and allow to set 5 minutes.

 

1 cup water

1/4 cup frozen orange juice concentrate

1/8 tsp. salt

1/2 tsp. vanilla

2 Tbsp. minute tapioca

 

Bring above to a rapid boil, stirring constantly.

 

Remove from heat and add the following:

 

1/3 cup chopped prunes

1 - 16 oz. can unsweetened sliced peaches with juice (about 1 1/2 - 2 cups)

1 apple, cut in bite-sized pieces

 

If possible, let soup set 30 minutes or overnight to allow prunes to plump before serving.

 

After you are acquinted with this recipe, fruit soup can survive variations quite nicely. Best when served hot, but cold is pretty nice too.

 

Fruit soup can be served as a soup, or it can also be served over cooked brown rice for breakfast. You might enjoy it on granola, or over taost spread with peanut butter.
