Guest guest Posted September 16, 2001 Report Share Posted September 16, 2001 Double Chocolate Bread Source: You Can't Get Mad Vegan Disease III 1 cup water 1 Tbsp. flax seed 3/4 cup semisweet chocolate 1/4 cup unsweetened baking chocolate 1/4 cup vegan margarine 2 cups bread flour 3/4 cup sugar (vegan; such as Florida Crystals) 2 Tbsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 3/4 cup soy milk 1/4 cup silken tofu 1/2 cup egg replacer 1 Tbsp. vegan margarine 1 tsp. almond extract Preheat oven to 350F. In a small pot, boil the 1 cup water and the flax seed for 3 minutes. Let cool in the refrigerator 30 minutes. Discard seeds, use only the gelatin. In a bowl, microwave for 1 or 2 minutes both chocolates and the 1/4 cup of margarine. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a medium bowl whisk together the soy milk and tofu. Add the egg replacer, margarine, and almond extract. Pour liquid mixtures into dry ingredients and fold in with a spatula until combined. Fill a greased 9" loaf pan and bake for 1 hour.
