Guest guest Posted September 17, 2001 Report Share Posted September 17, 2001 Fruit Cobbler Source: The Best of Silver Hills Cookbook 2 cups unbleached white flour 1/4 cup whole wheat flour 3 tsp. baking powder 1/2 tsp. salt 1/4 cup brown sugar or cane sugar substitute (choose vegan variety of sweetener such as date sugar) 3 Tbsp. commercial cashew butter 1 1/4 cups cold tofu milk (or alternative) 1/2 tsp. vanilla Preheat oven to 350 degrees F. Mix dry ingredients together in small bowl. Cut nut butter into dry ingredients until crumbly. Add milk and vanilla and combine well. Pour prepared thickened fruit (any type) into an 8 x 8 inch cake pan. Spoon cobbler mixture on top of thickened fruit and bake for 1 hour.
