Peach Pie in a Jar 6 quarts peeled, sliced peaches 4 c. sugar (vegan; Florida Crystals) 1 3/4 c. Clear Jel A (kind for canning) 5 1/4 c.water 1 t. cinnamon 1 t. almond extract Mix sugar and Clear Jel together.....add water using wire whisk...boil to thicken.....add cinnamon and almond extract....stir well. Then add 3/4 c. lemon juice. Fold fresh peaches into mixture.....place into quart jars....cap and process 20 minutes.....
