Sauté: 1/4 cup oil 1 medium onion chopped fine1/2 tsp. minced garlic1 1/2 pound zucchini, sliced 2 tsp. saltbasilvegan margarine Add, cover and simmer for 20 minutes the following: 4 cups chicken style broth (vegan seasoning blend such as Bill's Best or McKays) 1/2 tsp. nutmeg1/8 tsp. pepper In blender, blend till smooth: 1/2 pkg. Tofu 2 Tbsp. water1 Tbsp. nutritional yeast flakesa little oil Stir blended tofu mixture into soup and heat. (Do not boil).
