Guest guest Posted September 18, 2001 Report Share Posted September 18, 2001 Minestrone Soup Source: Jackie B. 8 cups water 1-14 oz. can tomatoes with juice, cut up2 1/2 cups chopped onion 1 cup thinly sliced carrot3/4 cup thinly sliced celery 1-14 oz. can kidney beans, with liquid2 cups green beans, fresh, frozen or canned.2 cups elbow macaroni, uncooked2 Tbsp. instant vegetable stock mix1/1/2 tsp. parsley flakes1 1/2 tsp. salt1/4 tsp. pepper Measure first five ingredients into Dutch oven. Heat, stirring often, until mixture comes to a boil. Cover. Simmer slowly for about 35 minutes until vegetables are cooked.Add kidney beans and green beans. return to a boil. Cook until green beans are tender. Add Macaroni, stock mix, parsley flakes, salt and pepper. cover. Stir often as you return mixture to a boil.
