Guest guest Posted September 18, 2001 Report Share Posted September 18, 2001 Black Bean Soup 1 1/2 cups water 1-19 oz. can black beans4 Tsp. instant vegetable stock mix 1/4 tsp. ground coriander1/4 tsp. ground cumin 1 tsp. sweet pickle relish1/4 tsp. hot pepper sauce (more if desired) 2 Tbsp. soy sour cream2 tsp. grated soy "Monterey Jack" cheese (may omit) Run water and beans through blender. Pour into saucepan. Add next 5 ingredients. Stir. Heat, stirring often, as mixture comes to a boil. Boil slowly, uncovered for about 10 minutes to blend flavors. Pour into 2 bowls. Top each with 1 Tbsp. soy sour cream. Sprinkle each with 1 Tbsp. soy cheese (or nutritional yeast).
