Guest guest Posted September 18, 2001 Report Share Posted September 18, 2001 Vegetable and Corn Chowder Source: Jackie B. 1 Tbsp. vegetable oil 1 red onion, diced1 red bell pepper, diced 3 garlic cloves crushed1 large potato, diced 2 Tbsp. all-purpose flour2 1/2 cups soy or nut milk 1 1/4 cups vegetable stock1 3/4 ounces broccoli florets 3 cups canned corn, drained3/4 cup soy cheese, grated salt and pepper1 Tbsp. chopped fresh cilantro, to garnish Heat oil in large saucepan and sauté onion, bellpeppers, garlic and potato for 2-3 minutes. Stir in flour, cook for 30 seconds. Stir in soy milk and stock. Add the broccoli and corn. Bring to boil, stirring. reduce heat, simmer 20 min. until vegetables are tender. Stir in 1/2 cup soy cheese until it melts (if possible!). Season, garnish with cheese and cilantro.
