Makes 5 servings 1 14 1/2 ounce can stewed tomatoes 1 cup water1/4 cup chopped onion 1/2 of envelope taco seasoning mix (check for vegan ingredients)2/3 cup couscous 1 pkg. firm tofu drained, finely chopped10 taco shells, warmed 1/2 cups shredded lettuce2/3 cup shredded soy cheese Salsa In a medium saucepan combine undrained stewed tomatoes, water, onion, and taco seasoning mix. Bring to a boil. Stir in couscous and tofu. Cover; remove from heat. Let stand for 5 minutes. Spoon couscous mixture into taco shells, top with lettuce and soy cheese.
