Guest guest Posted September 20, 2001 Report Share Posted September 20, 2001 Corn Patties Source: Jackie B. 11 1/2 ounce can corn, drained 1 onion chopped finely1 tsp. curry powder 1 garlic clove , crushed1 tsp. coriander 2 scallions, chopped (or green onion)3 Tbsp. flour (gluten free flour blend, if necessary) 1/2 tsp. baking powdersalt egg substitute equal to one egg (soy flour or flax seed gel) 4 Tbsp. sunflower oil Mash the corn lightly in a bowl. Add all the ingredients except for the oil, one at a time stirring after each addition. Heat the oil in skillet. Drop carefully into hot oil. Cook each patty 4-5 minutes, turning each patty once, until golden brown and firm. Remove the patties from pan and drain on paper towels. Serve warm with sweet chili sauce.
