Festive Fruit Salad

3 red apples, diced with peel

3 green apples, diced with peel

2 celery ribs, diced

1/4 cup dates, chopped

1/2 cup pecans

 

Combine all ingredients.

 

Golden Apple Cream Dressing:

 

1 cup frozen apple juice concentrate

1/4 cup honey (or vegan substitute)

1 Tbsp. cornstarch

1/2 tsp. salt

 

Whiz together and heat to thicken. Cool slightly and pour over fruit salad.
