Guest guest Posted October 29, 2001 Report Share Posted October 29, 2001 Stir-Fried Sesame Zucchini2 pounds medium zucchini, halved lengthwise and cut into 1/4-inch slices2 teaspoons salt4 garlic cloves, peeled and chopped1 scallion, chopped3 Tablespoons vegetable oil1 Tablespoon sesame oil2-1/2 Tablespoons roasted sesame seedsIn a large bowl, sprinkle zucchini with 1-1/2 teaspoons salt; toss well andset aside for 30-40 minutes. Drain thoroughly and pat dry. Place vegetableoil in wok and set over high heat. When oil has heated, add garlic, stirringonce or twice or until the garlic begins to color. Add zucchini and stir-fryfor 4-5 minutes or until zucchini are just done. Put in the remaining 1/2teaspoon salt, scallion and sesame oil.
