Blueberry MuffinsSource: Allergy Cooking with Ease1 3/4 cups quinoa flour1/4 cup tapioca flour2 tsp. baking soda1/2 tsp. unbuffered Vitamin C crystals (or lemon juice)2 tsp. cinnamon1 cup fresh or unsweetened frozen blueberries1 cup unsweetened applesauce1/4 cup apple juice concentrate, thawed1/4 cup oilMix the dry ingredients together. Mix together the applesauce, apple juice, and oil, and add them to the dry ingredients, stirring until just mixed. Quickly fold in the blueberries. Put the batter into an oiled and floured muffin tin, filling the muffin cups about 3/4 full. Bake at 375° for 20 - 25 minutes. Makes about 16 muffins.
