Guest guest Posted November 1, 2001 Report Share Posted November 1, 2001 Pear MuffinsSource: Allergy Cooking with Ease1 3/4 cups quinoa flour1/4 cup tapioca flour2 tsp. baking soda1/2 tsp. unbuffered Vitamin C crystals (or lemon juice)2 tsp. cinnamon1 1/2 cups peeled and chopped apples1 1/4 cups pear juice 1 1/2 cups fresh, peeled and chopped pears (or canned if fresh isn't available)1/4 cup oilMix the dry ingredients together and stir the chopped, fresh pears into them. Mix together the pear juice and oil, and add them to the dry ingredients, stirring until just mixed. Put the batter into an oiled and floured muffin tin, filling the muffin cups about 3/4 full. Bake at 375° for 20 - 25 minutes.
