Guest guest Posted November 1, 2001 Report Share Posted November 1, 2001 Millet Surprise Muffins Source: Allergy Cooking with Ease These muffins are fragile, but the jelly surprise inside them helps to hold them together. 1 cup millet flour 3/4 cup tapioca flour 3/4 tsp. baking soda 1/8 tsp. unbuffered Vitamin C crystals (or lemon juice) 1 tsp. cinnamon 3/4 cup apple juice concentrate, thawed 1/3 cup oil 2 - 3 Tbsp. unsweetened all-fruit jam Mix the flours, baking soda, Vitamin C crystals, and cinnamon in a large bowl. Combine the juice and oil and stir them into the dry ingredients until just mixed in. Fill 12 oiled anf floured muffin cups 1/3 full with the batter, and 1/2 tsp. fruit jam to the center of each muffin cup, adn then top the jam with additional batter to fill the cups about 3/4 full. Or, omit the jam and fill muffin cups 2/3 full with the batter. Bake at 400° for 15 - 20 minutes.
