Guest guest Posted November 2, 2001 Report Share Posted November 2, 2001 Stevia-Sweetened Spice Muffins Source: Allergy Cooking with Ease (This is a gluten-free recipe) 1 3/4 cups amaranth flour plus 1/2 cup arrowroot OR 1 1/2 cups quinoa flour plus 1/2 cup tapioca flour 2 tsp. baking soda 1/2 tsp. unbuffered Vitamin C crystals 2 tsp. cinnamon (optional) 1/4 tsp. white stevia powder 1 cup water 1/4 cup oil Stir together the amaranth flour and arrowroot OR the quinoa flour and tapioca starch with the baking soda, Vitamin C crystals, cinnamon, cloves, and stevia powder. Combine the water and oil and stir them into the dry ingredients. (The dough will be stiffer than most muffin batter.) Put the dough onto an oiled and floured muffin tin and bake at 375° for 20 to 25 minutes. They aren't vegan, but most of the recipes are easy to adapt. I'll check them out and post some recipes here. Right now I'm on a " gluten-free " kick, can you tell? I'll try to convert that to a " stevia " one, okay? Anyone else out there have any great recipes? I'm trying to think up something new for Thanksgiving. . .
