Guest guest Posted November 2, 2001 Report Share Posted November 2, 2001 Quinoa Crackers Source: Allergy Cooking with Ease These make great snacks, as well as being good with a simple soup or salad meal. 3 cups quinoa flour 1 cup tapioca flour 1/4 cup sesame seeds 2 tsp. baking soda 1/2 tsp. unbuffered Vitamin C crystals (or lemon juice) 1 tsp. salt 1 1/4 cups water 1/2 cup oil Mix together the quinoa flour, tapioca flour, sesame seeds, baking soda, Vitamin C crystals, and salt in a large bowl. Combine the water and oil and stir them into the dry ingredients until the dough sticks together, adding a few more tablespoons of water if necessary. Divide the dough into thirds. Roll each third to about 1/8" thickness on an ungreased cookie sheet. Cut the dough into 2" squares and bake at 350° fpr 15 to 25 minutes, or until the crackers are crisp and lighty browned.
