Guest guest Posted November 2, 2001 Report Share Posted November 2, 2001 Graham Crackers Source: Allergy Cooking with Ease 3 cups quinoa flour 1 cup tapioca flour 2 tsp. baking soda 1/2 tsp. unbuffered Vitamin C crystals (or lemon juice) 1 1/4 cups thawed apple juice concentrate 1/2 cup oil Mix together the quinoa flour, tapioca flour, baking soda, and Vitamin C crystals, in a large bowl. Combine the apple juice concentrate and oil and stir them into the dry ingredients until the dough sticks together, adding a few more tablespoons of apple juice if necessary. Divide the dough into thirds. Lightly oil the cookie sheets before rolling dough on them. Roll each third to about 1/8" thickness on an ungreased cookie sheet. Cut the dough into 2" squares and bake at 350° for 15 to 25 minutes, watching the crackers carefully to prevent burning. Remove the crackers from the cookie sheet immediately, using a spatula to pry them off if necessary.
