Guest guest Posted November 2, 2001 Report Share Posted November 2, 2001 Coconut Milk Wafers Source: Allergy Cooking with Ease A crunchy, gluten-free alternative to chips! 1 cup tapioca or water chestnut flour 1/4 tsp. baking soda 1/8 tsp. Vitamin C crystals (or lemon juice) Coconut milk - 7 to 8 Tbsp. with tapioca flour OR 12 to 13 Tbsp. with water chestnut flour Melted coconut oil, OR any other kind of oil Mix the tapioca or water chestnut flour, baking soda, and Vitamin C crystals. Add the coconut milk one tablespoon at a time to make a very stiff dough. Drop teaspoonfuls of the dough onto an oiled cookie sheet and flatten them to 1/8" or less thickness with your hand. Bake at 350° for 10 - 15 minutes, or until the edges begin to brown. Turn them over and bake 5 minutes more.
