Queensland Coconut Pie (raw)

1 Tbsp. powdered agar

1 cup water

1/2 cup ground cashews

1/2 cup gresh ground coconut

 

Dissolve agar in water and cook until clear. Blend in blender. Add cashews and coconut. Blend until well mixed. Line glass pie plate with above mixture.

 

Filling:

1 cup finely ground coconut (raw, unsweetened)

2 cups pitted dates

1/2 cup finely chopped pecans

Bananas

 

Blend dates in blender with a little water. Then blend in nuts and coconut, add more water if needed. Add layer of date mixture to crust. Then sliced banana. Add another layer of date mixture, then bananas. Top with date mixture.

 

Serve and enjoy!
