Guest guest Posted November 2, 2001 Report Share Posted November 2, 2001 Quinoa-Potato Petite Croquettes Source: Adapted from Ancient Harvest Brand Quinoa package 2 cups potatoes (mashed with skins on) 2 cups quinoa, cooked egg replacer equivalent to two eggs (Ener-G or flax seed gel recipe) 1/2 cup onion, chopped 1/4 cup parsley, chopped 1/2 tsp. salt 1/2 tsp. cumin 1/2 tsp. oregano Combine all ingredients.
