Guest guest Posted November 2, 2001 Report Share Posted November 2, 2001 Quinoa Corn Bread Source: Ancient Harvest Brand Quinoa package (adapted) 2 cups corn meal 1 cup quinoa meal 1 tsp. salt 1/2 tsp. baking soda 1 1/2 tsp. baking powder 1 Tbsp. liquid sweetener or Sucanat egg substitute equal to one egg (Ener-G or flax seed gel recipe) 3 Tbsp. olive oil 2 1/2 cups milk alternative (rice, nut, or soy) 2 Tbsp. 2 tsp. lemon juice Preheat oven to 425°. Prepare quinoa meal by grinding raw quinoa in a blender. Combine all dry ingredients. Combine wet ingredients. Mix the two together. Bake in greased 9" x 9" pan or prepared muffin tin until golden (about 25 minutes). Serve hot!
