Guest guest Posted November 2, 2001 Report Share Posted November 2, 2001 Quinoa Granola Source: Live Unfired Foods This granola is good for snacks and to take on outings, as well as for breakfast. 1 1/2 cups quinoa flour (you can make this by blending whole quinoa in a blender) 1/2 cup tapioca flour 1 1/2 cups chopped nuts 1/2 cup sesame seeds 1 1/2 tsp. cinnamon 1/3 cup oil 3/4 cup unsweetened applesauce 1/4 cup apple juice concentrate, thawed 2/3 cup chopped dried pears, chopped dates, raisins, and other dried fruit Combine the flours, nuts, seeds, and cinnamon in a large bowl. Mix the oil, applesauce, and juice and pour them into the dry ingredients. Stir until the dough sticks together, adding a little more apple juice concentrate or water if necessary. Spread the dough in a lightly oiled 15" x 11" pan. Bake at 300° for 1 hour, or until light brown, breaking the dough into chunks and stirring it every 15 minutes. Cool the granola completely and stir in the dried fruit. Makes about 8 servings of cereal.
