Guest guest Posted November 2, 2001 Report Share Posted November 2, 2001 Banana Bread Source: Allergy Cooking with Ease 2 cups amaranth flour plus 1/2 cup arrowroot 2 tsp. baking soda 1/2 tsp. unbuffered Vitamin C crystals (or lemon juice) 1/2 tsp. ground cloves (optional) 1/2 cup chopped nuts (optional) 1 3/4 cups mashed ripe bananas 1/4 cup oil Stir together the flour(s), baking soda, Vitamin C crystals, cloves, and nuts in a large bowl. Combine the mashed bananas and oil and stir them into the dry ingredients until they are completely mixed in, but be careful not to overmix. (The batter will be stiff). Put the batter into an oiled and floured 9" x 5" loaf pan and bake at 350° for 55 - 60 minutes, or until the bread is lightly browned and a toothpick inserted in the center comes out dry. Remove it from the oven and allow it to cool in the pan for 10 minutes. Remove it from the pan to cool completely. Makes one loaf.
