Guest guest Posted November 4, 2001 Report Share Posted November 4, 2001 Korean Cucumber Salad Source: NEWSTART Lifestyle Cookbook *Sesame seeds are an excellent and high source of calcium! 2 cucumbers 1/2 red onion 1/2 lemon peel 1/4 cup fresh lemon juice 1/4 cup toasted, ground sesame seeds 2 Tbsp. water 1 tsp. minced garlic 1/2 tsp. salt Peel and slice cucumbers. Shred onion and lemon peel and mix with cucumbers. Combine remaining ingredients and mix together well. Pour over cucumbers and toss together. Chill and serve. Serves: 6 Calories per 1/6 recipe: 44 calories Fat grams: 2.0 Calcium: 58 mg.
