Guest guest Posted November 4, 2001 Report Share Posted November 4, 2001 Carob Chip Cookies Source: NEWSTART Lifestyle Cookbook 1 1/4 cups water 1 cup clean, raw cashews or walnuts 3/4 cup pitted dates 2 tsp. vanilla 1/2 tsp. salt 1 1/4 cups brown rice flour 1 cup date or malt-sweetened, nondairy carob chips 1 cup raisins Process cashews and water in blender until very smooth, then add next 3 ingredients and continue blending until smooth. Pour into a mixing bowl and add remaining ingredients. Mix well. Drop by spoonfuls onto sprayed cookie sheets and bake at 350° for 20 - 25 minutes. Yields 40 cookies.
