Guest guest Posted November 4, 2001 Report Share Posted November 4, 2001 Banana Date Cookies Source: NEWSTART Lifestyle Cookbook 3 bananas, mashed 1 tsp. vanilla 1/2 tsp. salt 1 cup unsweetened, shredded coconut 1 cup chopped, packed dates 1 cup chopped dried fruit, such as papaya or pineapple 1 cup raisins or dried currants 1/2 cup chopped walnuts 1 cup rolled oats Stir vanilla and salt into mashed bananas. Add remaining ingredients, except oats, and mix together. Stir in oats. Drop by spoonfuls onto sprayed cookie sheets and bake at 350° for 25 minutes. For variation, omit coconut and increas rolled oats to 2 cups. Yields: 3 dozen 1 1/2" cookies. Calories per 2 cookies: 128 Fat grams: 4 g.
