Guest guest Posted November 9, 2001 Report Share Posted November 9, 2001 Basic Whole Wheat Bread Source: Country Life Natural Lifestyle Cookbook In a large bowl, combine: 4 cups warm water (110 °) 2 Tbsp. dry yeast 1/3 cup liquid sweetener Let sit until bubbly. Add: 4 cups flour, one cup at a time, beating after each addition. Cover and place in a warm spot for 15 - 30 minutes, or until bubbly. Add: 1/4 cup oil 3 tsp. salt 2 Tbsp. lecithin - optional (use vegan type; when using lecithin, you may omit oil) Add remaining flour, 5 - 5 1/2 cups whole wheat flour. May use other whole grain flours, or 1/2 cup soy flour in place of equal amount of whole wheat flour. Knead well. Let sit in warm place until double in size. Make into loaves; place in pans. When loaves have almost doubled, place in pre-heated oven and bake for 55 minutes at 350°. Remove and cool briefly, then remove from pans and allow to cool standing on end, or on cooling rack.
