Guest guest Posted November 13, 2001 Report Share Posted November 13, 2001 Cashew Stuffing Source: Cooking by the Book 1 cup diced onions 1 cup finely diced celery 1/3 cup parsley 1/2 cup sliced black olives 3 quarts cubed whole wheat bread, toasted 2 1/2 tsp. salt 2 tsp. poultry seasoning 1/2 cup margarine (vegan) --- or olive oil 1 cup chicken style broth 1 1/2 cups coarsely chopped cashews Mix all ingredients together. Place in greased casserole dish. Bake 45 minutes at 350°. Serves 6 - 8. OR stuff into a whole, half-baked pumpkin or winter squash that has been cleaned out inside. Bake 45 minutes at 350°. Continue baking until pumpkin is tender when poked with a fork. Makes a beautiful, edible centerpiece for your Thanksgiving dinner table. Serves 6 - 8. For chicken style broth, add 1 tsp. chicken style seasoning to 1 cup water.
