Guest guest Posted November 13, 2001 Report Share Posted November 13, 2001 Pimiento Dip Spread/Dressing Source: Cooking by the Book 1 cup cashews 1/2 cup water (use part liquid from pimientos) 1 small jar pimientos (2 whole) 2 small green onions with tops 1/2 tsp. salt Lemon juice Blend all ingredients well in blender for two minutes until smooth. Stir in small amount of fresh lemon juice to taste. Delicious on avocado, cucumbers, tomato and cabbage slaw. Good spread for sandwiches or crackers. Great for stuffing celery.
