Raspberry Lemon Dressing

Raspberry Lemon Dressing

Source: Creation, Illustrated magazine

 

6 --- 8 oz. frozen raspberries

1 Tbsp. lemon juice

1 tsp. olive oil (optional)

 

Prepare dressing by thawing the frozen raspberries. Strain raspberry juice through a tightly meshed sieve. Try not to let many seeds through. If berries are unsweetened, add one tablespoon of white grape juice concentrate. Mix in remaining ingredients and drizzle over salad.

Thanks! I've been vegetarian for 9 years & have tried to go vegan a few times but failed. I've read lots of stuff on veganism & am determined to stick with it this time!

What's been the hardest part of sticking with it? Maybe we can come up

I suppose I lack conviction LOL It's the cheese! I just don't like the taste of soy/rice cheeses that I've tried. I think I am just going to have to live without it.

Know the feeling, I was rather distraught to discover a severe lack

of decent-tasting soy cheese on the market when I turned vegan. Two

lifesavers have been avocado and creamed corn. The avocado because

when I'm out I can order toasted avo and tomato sandwiches, no

butter... and they taste great. The corn because I LOVE tacos and

burritos - and creamed corn is a perfect complement to the hot bean

mixes I create!

Now this is interesting! I'm going to have to try this. We love tacos but

generally don't even try to make up for the cheese--just leave it

off. (BTW, last time I made tacos I cooked some couscous with taco

seasoning, and we made the tacos with couscous and beans. It really made

for an interesting texture, and we all liked it very much.)

 

I don't like the commercial cheese substitutes, either, but I've found that

I don't miss dairy products nearly as much as I thought I would. But do

you have the Uncheese Cookbook (or something close to that) by Joanne

Stepaniak? It has a lot of truly decent cheese substitutes in it.

 

Oh! And Nonna's Italian Kitchen by Bryanna Clark Grogan has the most

awesome lasagna recipe. My daughter even argued with me that I had used

her ricotta cheese in it! I had to go to the fridge and show her that her

cheese was indeed intact. LOL

I promise you that after you don't eat it for a while, you will find cheese

to be very greasy and just generally icky. Really! My girlfriend was the

biggest cheese eater--she loved it, all kinds....cheddar, feta, cream

cheese, parmesan, etc. But she needed to cut it out because dairy products

contribute to menstrual cramps (a damn good reason not to eat them, IMO)

and endometriosis, which she has. Anyway, she quit dairy a couple of

months ago.

 

About 2 weeks ago, we were at a restaurant and she ordered macaroni and

cheese. She took 2 bites of it and said " I can't eat this. It's just too

cheesy. " Believe me, those were words that I *never* thought would come

out of her mouth!
