Then place in a kettle with water (about 1 - 2 inches in the bottom) and cover with a lid. Steam until tender. Then puree until smooth. The hardest part is getting it as smooth as the canned pumpkin. . .you might have to work at it. I have a special attachment for pumpkin that I put on my applesauce maker, but I know it isn't a common item. You can also scoop out the seeds and place the pumpkin in the oven with a small amount of water in the shell (for steam) and bake. Then scoop out the soft sections and puree. Hope this helps! I cleaned out the seeds and goop, and then put it in a large glass bowl with a little water (about 1/2 cup) in the bottom. Microwaved it until it was soft (started with 7 minutes and just kept adding minutes until it was ready, so I'm not sure exactly how long it took but probably 12-15). Then I let it cool completely and just scooped it out of the skin. I didn't puree it or anything because the pie recipe I used had me put all the ingredients in the blender. (I used the Bryanna Clark Grogan pie recipe on vegsource.com, and it was excellent.) By the way, that small pie pumpkin was big enough to make 2-3 pies, so if your pumpkin is large, consider just cooking part of it and using the rest for a stew or something. The time will vary depending on the size of the pumpkin, but count on a minimum of 45 minutes or so. You can freeze the leftovers in 2-cup portions and substitute it for canned pumpkin in recipes.
