Guest guest Posted November 14, 2001 Report Share Posted November 14, 2001 Nutty Baked Squash Source: Cooking by the Book 2 acorn squash 2/3 cup bread crumbs (gluten free if necessary) 1/3 cup coarsely chopped pecans or walnuts 3 Tbsp. melted vegan margarine 3 Tbsp. sweetener (liquid) 1/2 tsp. salt 1/4 tsp. cardamom Cut each squash in half. Remove seeds and fibers. Mix remaining ingredients together. Spoon 1/4 of mixture into each squash half. Bake at 400° F in covered dish for 1 hour. Serves: 4 - 6.
