Guest guest Posted November 18, 2001 Report Share Posted November 18, 2001 Pecan Pie Source: Recipes for Life (www.hacres.com) 3 cups pecans 1/2 cup rice syrup 1/2 cup maple syrup 1/4 cup unsulphured molasses 1/4 cup organic apple juice 1 tsp. pure vanilla 1 tsp. Braggs liquid aminos 2 T. arrowroot powder 1 T. agar agar 1 tsp. cinnamon 1/2 tsp. nutmeg Make whole-grain pie crust (recipe below or choose your own) and place in pie pan lined with liquid lecithin (olive oil spray works fine). Set aside. Preheat oven to 350 degrees. Blend one cup of pecans with the rest of the ingredients into a creamy consistency. Put remaining pecans in the pie pan, and pour over them the blended mixture. Bake for 35-45 minutes or until cooked through. Remove from oven and cool before serving. Pie will harden as it cools. Whole Grain Pie Crust 1 cup almonds 1 cup whole wheat pastry flour (I use fresh milled white wheat) 1 cup rolled oats 1/2 cup cold organic apple juice Using food processor with S blade, grind almonds fine, add rolled oats and process until fine, add flour and process until fine. While machine is running, add apple juice 1 T. at a time until ball forms. Stop machine immediately. Remove dough and wrap in wax wrap. Refridgerate at least 1 hour. Roll out between wax wrap.
