Pecan Pie #6

Source: Recipe files of my MIL

 

1 cup water

1/3 cup raw cashews

1 Tbsp. arrowroot

1/2 cup soy milk powder (Better Than Milk Lite)

2/3 cup pitted dates

1 tsp. vanilla

1/4 tsp. salt

1 tsp. lemon juice

1 cup pecans, chopped and half

 

Make 1 pie crust. Place all ingredients except pecans in blender, and whiz at medium speed until smooth. Pour into shell and arrange pecans on top. Bake at 350° for 1 hour. Cover with foil last 15 minutes to preent excess browning. Cool. Keep uncovered.
