Best Corn-Oat Waffles

7c regular oats

8-9 c water

1c unrefined cornmeal

1/4c oil

2 tsp salt

1/2c dates OR 1/4 c honey

2 Tbs vanilla OR maple extract

 

Still all together. Prepare waffle iron. Close lid & preheat on

high 5-8 mins. Sprinkle sesame seeds on bottom for easy removal &

enhanced flavor. Pour 1 3/4c batter over seeds & sprinkle more seeds

on top. Bake 10-12 mins. Cook. These freeze & store very well for

a waffle-on-the-go. Yields 6 9 " x 9 " waffles.

Carob Waffles

3c warm water

1 1/2c regular oats

1/2c coconut

1/2c carob powder

3/4 tsp salt

2 tsp vanilla

1/2 tsp coffee substitute

8 pitted dates OR 2-3 Tbs honey

 

Blend all until creamy. Let stand 10-15 mins to thicken. Follow

cooking directions above. Yields 2 9 " x 9 " waffles.

Bread Waffles

2c water

1c regular oats

3 slices whole grain bread

2 tsp vanilla OR maple flavoring

1/4 tsp salt

2 Tbs honey OR 1/4c date butter (*)

2 Tbs oil (optional)

 

Cut bread into 5-6 pieces. Put in blender & add all ingredients.

Bake 8-10 mins in pre-heated waffle iron. (This is a good way to use

old bread. If you use savory bread - onion, dill, rye - then omit

honey & vanilla & add onion & garlic to taste.)

Very Light Waffles

2 1/2c water OR soy milk

2c regular oats

2 Tbs sesame seeds

2 Tbs whole grain flour

2 tsp liquid or granular lecithin

3/4 tsp salt

2 tsp vanilla, maple OR lemon extract

2 Tbs honey OR 3 Tbs apple juice OR 1/4c raisins OR dates

 

Blend all until creamy. Follow cooking directions for Best Corn-Oat

Waffles.

* Date Butter

1c pitted dates

3/4c warm water

 

Put all in saucepan & boil. Remove from heat & let sit for 5 mins.

Blend on high till smooth. For a 'raw' version, soak dates for 15

mins, then blend. Good for cookies, cakes, pies or granola. Great

on toast, muffins, waffles, pancakes, etc. Yields 1 1/4c. (You can

use any dried fruit - figs, apricots, prunes, etc.)
