However, I did a quick internet search & found this: _________ Chocolate-Banana pudding This is a 'stodgy, cakey pud' - nice served with vegan ice cream, soy cream or custard. Good for using up overly ripened bananas. Ingredients: 4oz/125g./scant half cup vegan margarine 4oz./125g./half cup sugar 4oz/125g./three quarters of a cup self-raising flour 1 tablespoon of cocoa 2 ripe bananas 1 cup soya milk Mash the marg., sugar, bananas, cocoa and flour together in an oven proof bowl, and then use the soya milk to mix everything together well. You may need to add a little more soya milk to get a good cake- mix type consistency. Bake (yes - in the bowl) at 200C/400F for about 20 minutes until cooked. ** The site is at: http://www.veganfamily.co.uk/kitchen.html#cakes ______ Christmas Pudding 8oz veg suet 1 heaped tsp mixed spice ½ tsp ground nutmeg ½ tsp cinnamon 4oz flour 1lb light muscavado sugar 8oz bread crumbs 8oz sultanas 4oz raisins 4oz cherries, chopped 2oz flaked almonds 2oz mixed peel Zest of 1 lemon Zest of 1 orange 1 apple, grated 2oz soya flour blended with 10 tbs water 10 fl oz stout (eg Samuel Smith's Imperial Stout) with 2 tbs malt extract 4 tbs brandy Mix all the dry ingredients in a large bowl. In a different bowl blend all liquids and the soya flour mixture, pour over the dry ingredients. Stir all together very thoroughly. If after you have done this the mixture seems a bit dry add some more stout until you get it to a dropping consistency. Cover and leave overnight. Next day, grease the pudding basins, fill to the top with mixture and cover securely. Steam for 8 hours. Guest guest Posted January 14, 2002 Report Share Posted January 14, 2002 Hi Gareth, I had the same problem a while ago and someone sent me this recipe YORKSHIRE PUDDING --------------------------- 1 cup white SR flour 1 cup wholemeal SR flour (or use plain flour and add baking powder) 1 tsp salt 2 egg replacers 1 cup soya milk 1 cup water knob of solid white vegetable fat Heat oven to maximum temperature. Melt the vegetable fat in a large baking tray until piping hot. Meanwhile, mix the dry ingredients together. Hydrate the egg replacers according to instructions on packet and stir in. Gradually add the water and soya milk and mix till smooth. Pour into piping hot tin and bake for 20-25 mins, until golden brown on top.
