There is a wonderful recipe for vegan french toast in Vegan Vittles, here it is, in short form: 2/3 cup non-dairy milk 4 teaspoons whole wheat pastry flour 1 1/2 teaspoons vegan nutritional yeast flakes pinch of salt (optional) Beat the above ingredients together. Heat up some non-stick cooking spray or soy margarine (this is what I prefer) in a pan. Dip the bread in the batter and place in pan. Cook on medium heat until they are browned on each side. I've recently resumed my vegan lifestyle and was instantly reminded of the usual (for me) "breakfast boredom." QUESTION: Any suggestions for breakfast, other than cold cereal or oatmeal? They're OK, and I do enjoy them, especially when I add the sunflower seeds, raisins, other fruit, walnuts, etc. But I'd really like to try something different and my creativity doesn't seem to extend to breakfast. One thing we love is scrambled tofu and really oniony well done homefries, YUM! Also there are some good recipes under " breakfast " here: http://www.vegweb.com/food/ and here: http://cgi.fatfree.com/cgi-bin/fatfree/recipes.cgi Recipe from Recipes from a Vegetarian Goddess by Karri Allrich karriannallrich Tofu Scramble Ingredients: + 2-3 Tablespoons extra virgin olive oil + 1 Vidalia (or sweet) onion, cut into chunks + 5 garlic cloves, minced + 1/2 teaspoon ground ginger + 1/2 teaspoon chili powder + 1/2 yellow bell pepper, seeded, chopped (green works well, too) + 1 cup sliced mushrooms (Porcini or shiitake work well) + 4 Roma (plum) tomatoes, chopped + 1 pound firm tofu, drained well, cut into bite size pieces + 2 Tablespoons wheat free Tamari sauce, or soy sauce + freshly ground pepper, to taste + fresh snipped chives + 4 fresh corn tortillas, warmed Directions: Heat the olive oil over medium heat in a large skillet and sauté the onion for 5 minutes until softened. Add the garlic and spices, stir, and cook 1 minute. Add the pepper and mushrooms, stir-frying until tender-crisp. Add the tomatoes and slices of tofu. Gently stir-fry for 3-4 minutes. Sprinkle with the tamari sauce and season with fresh pepper. Serve on a warm plate with a warm tortilla. The best way I can describe it is homefried potatoes with stir-fried veggies added. I make a large skillet of homefries, then for the veggies I stir-fry onion, peppers, mushrooms, and whatever else happens to have on hand that sounds good (this can be a " clean out the refrigerator " thing) I jave used steamed broccoli, green beans, zucchini...jalapenos, if you like it hot. Stir in some chopped fresh tomato at the last minute, after combining the potatoes & veggies. For spice, sprinkle on some Mrs. Dash or some tabasco. We love it! I usually have some frozen banana's on hand, add a scoop of soy protein powder, and other fruit (Pineapple, orange, kiwi) and just blend together. Banana and almond butter is also excellent flavor, filling, and a good source of protein. This is especially nice during the summer. Their fake sausage is really good, almost tastes like the real thing... almost. The only thing is, the sodium content is kinda high so moderation is key. Some of the grocery stores around here (NC) sell them and of course health food stores as well. I also love smoothies... especially with summer coming up and all those fresh fruits... Y-U-M-!- There's also vegan pancakes you could add fresh fruit to, as well as vegan waffles and muffins. Here's a recipe for fresh donut holes: Vegan Donut Holes 2 cups sifted flour 1/2 cup sugar 3 teaspoons baking powder 1 teaspoon nutmeg Ener-G Egg Replacer, equivalent to 1 egg 3/4 cup soy milk 3 tablespoons oil powdered sugar (optional) Sift together dry ingredients. Add egg replacer, soy milk and oil. Stir with fork until smooth. Heat 1 inch deep oil to 365 degrees. Drop dough by teaspoonfuls into hot oil.
