Tracy Roasted Oniony Veggies Ingredients: These are the veggies I use, but any could be used * red potatoes sliced in 4ths * carrots cut in chunks * yellow Squash cut in chunks * broccoli * onion cut in 4ths * 1/4 cup oil (I use olive) * 1 packet of Lipton onion soup mix * gallon size baggie Directions: Put all veggies in baggie, add oil and onion soup mix, shake till all veggies are covered evenly. Pour out onto a cookie sheet or large casserole pan. Bake at 450 for 30 to 45 minutes. If you are making a very large serving of this you may need 2 packets of soup mix. I serve this over rice. It is very delicious! You can also reduce the oil if needed. I have tried it without oil at all, and I found that they don't crisp as well.
