Guest guest Posted May 24, 2002 Report Share Posted May 24, 2002 I got both of these recipes from allrecipes.com for the chocolate cake I use vegan dark chocolate shavings , nuts , orange rind and orange juice in place of the water - truly decadent , yummy ! be sure to oil the pan well as this is very moist and sticky ; quite brownie like especially when made in a large rectangular cake pan ,Though this recipe calls for white sugar its easily adapted to make it truly vegan .. I haven't tried the tofu fudge mocha recipe but think I will make it for company this memorial day along with a few recipes from the Chili pepper site , thanks for that link ! on the allrecipe site someone who reviewed this said that Pillsbury has a vegan chocolate icing - does anyone know if that is true ? just curious , teresa Vegan Chocolate Cake This is a really simple, yet very tasty cake. You can use rice flour or something other than wheat. You can also add chocolate chips and, or nuts. Prep Time: approx. 15 Minutes. Cook Time: approx. 45 Minutes. Ready in: approx. 1 Hour . Makes 1 - 9x5 inch loaf pan (8 servings). Printed from Allrecipes, Submitted by Sue ---------- ---- 1 1/2 cups all-purpose flour 1 cup white sugar 1/4 cup cocoa powder 1 teaspoon baking soda 1/2 teaspoon salt 1/3 cup vegetable oil 1 teaspoon vanilla extract 1 teaspoon distilled white vinegar 1 cup water Directions 1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x5 inch loaf pan. 2 Sift together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth. 3 Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven and allow to cool. Tofu Fudge Mocha Bars 1 (12 ounce) package silken tofu, undrained 2 tablespoons safflower oil 1 pinch salt 2 1/3 cups turbinado sugar 1 cup cocoa powder 1/3 cup instant decaffeinated coffee powder 1 teaspoon vanilla extract 1 cup whole wheat flour Directions 1 Preheat oven to 325 degrees F (165 degrees C). 2 Using an electric mixer, blend tofu until creamy. Add oil, salt, sugar, cocoa, coffee and vanilla and blend well. 3 When sugar is dissolved into the tofu mixture remove the bowl from the electric mixer and whisk in flour. 4 Pour batter into a greased 9x13 inch baking pan. 5 Bake 25 to 30 minutes, or until the cake pulls away from the side of the pan. The bars will appear glossy, almost underdone. Cool in the pan and when cool cut into bars using a clean, wet knife.
