Not really ravioli, but similar:

 

Vegan Pelmeni

 

1 egg's worth of Kingsmill or other brand egg replacer

about 1/2 kg mushrooms - chopped

1/2 kg veggie ground round

1 onion

flour (3 parts) (You'll have to figure out how much - I screwed up when I

made it!)

water (1 part)

black pepper to taste

salt to taste

 

1. Mix together egg replacer, mushrooms, veggie ground round, onion, pepper

and salt well.

 

2. Mix flour, water and salt into a thick dough. Roll the dough thin.

 

3. Cut circles out of the dough with the help of a glass or a cup. Put some

filling into the middle of each dough circle. Fold the circles and pinch

their edges together.

 

4. Put them into salted boiling water and cook for 7-10 minutes. They are

ready when they rise to the surface of the water. Remove the cooked

pelmenies from the water, and drain.

 

5. Serve with Toffuti sour-cream, pepper, butter, sauce or in broth.
